SLOW BAKED LEMON SARDINES Mrs Soula Soulis

I know that at the moment everyone is trying to be very careful with their money, I am too. I thought it would be good to share a simple traditional recipe that is good for the heart, good for the brain and good for the purse!  Fresh sardines are really very very cheap to buy.  Baked in olive oil and lemon juice with a little oregano and garlic they are delicious served with a village salad – just perfect for a summer’s day. 

Ingredients

Kilo of fresh *whole sardines (gutted)

6 cloves of garlic, thinly sliced

1/2 cup of olive oil

1/2 cup of lemon juice

1/2 cup of water

Oregano - handful

Salt and black pepper to taste

 

Preparation

  • Pre heat oven to 350°
  • Lay out the sardines in a shallow baking tray
  • Pour over olive oil, lemon juice and water
  • Sprinkle with oregano, salt and black pepper to taste
  • Bake for 40 minutes.

 

*The fish mongers in town will obligingly snap off the heads if you prefer
